This one may look effortless and beautiful…and once it was cooked and plated it was more than a willing subject…but getting this beauty to the table posed more than a few problems for me. Still being one-handed for a few more weeks I was struggling with handling the pots, pans and utensils to make this one right. I completely botched the first attempt and needed to call in reinforcements. Luckily for me having one of the finest pastry chefs on the planet as one of my closest friends came in very handy in my time of need. Pichet Ong to the rescue. I called Pichet looking for some advice as to how I could avoid another flan disaster…what I got was a house call from Dr. Flan who said he’d be happy to take a detour from his Lower East Side tailor who was doing the alterations on his new Robert James skinny jeans.
I’m taking the time now to thank and credit Pichet for his effort in making this picture possible. It’s not our first food photography collaboration and won’t be our last but he needs recognition for this one, especially.
